PHOENIX (AZFamily) — More than three dozen restaurants across Arizona are being featured for their Japanese cuisine selection and usage of Japanese ingredients.

It’s called the 2025 Taste of Japan: Buri/Hamachi Promotion Week, and it runs through March 1.

The Japan External Trade Organization (JETRO), part of the Japanese government, features several restaurants in Arizona and New Mexico serving limited-time or special dishes.

This year, there is a special focus on yellowtail, a mainstay at many sushi restaurants known for its buttery and rich flavor. Hamachi, also known as Amberjack, is also showcased.

“Each participating restaurant will put its unique spin on yellowtail and accompanying paired ingredients for Arizonans across the Valley to sample and enjoy. Some of the participating restaurants include Yuzu Omakase, King Salmon and Shimogamo Chandler from the Phoenix metropolitan area,” organizers wrote in a news release.

Organizers say the group’s mission is to advocate for the inclusion of premium Japanese ingredients in cuisine and support Japanese exports.
